Confession: I don't like to cook. There, I said it. I feel better now. Even though cooking isn't my favorite thing in the world, I do like to feed my family well so I spend time in the kitchen for them. A labor of love. Here are a few tried and true recipes that make my family happy!
Miss Amy Tacos
(Made up by an old foodie friend who can cook up something healthy and delish like it's nothin')
What you'll need:
a head of cabbage, chopped (however much you think you'll need to feed your family. I prob do about 2 cups worth for my family of 7)
onion and garlic, whirled up in the food processor
can of black beans, rinsed (or dry beans that you cooked up in a pot because you are awesome that way!)
can of corn or frozen
salsa (1/2 cup or so)
3 or 4 eggs depending on the size of your family
cheese
corn tortillas
Saute the cabbage, garlic and onion until tender in butter or olive oil. Add beans, corn, salsa and stir up. Scramble the eggs in a separate bowl. In the skillet, move the cabbage mixture over, add more butter, pour in eggs, scramble then mix with the rest of the yumminess! Serve on warm tortillas and top with cheese! Enjoy
Pasta Sauce
This is my go-to for everything that needs sauce. Mostly pizza but also pasta, lasagna, chicken Parmesan, dipping sauce, etc.
1 small onion
2 garlic cloves
1 carrot
2 15oz cans of tomato sauce
1 t dried basil
1/2 t dried oregano
salt and pepper to taste
Whirl up the onion, garlic and carrot in the food processor and saute in a little olive oil under tender. Stir in the remaining ingredients and simmer for 15-20 mins. Enjoy!
Patti's Whole Wheat Pizza Crust
Pizza is a big hit in our house. My kids have claimed this pizza is better than Domino's, so we lovingly call this pizza MamaKnows (get it?! haha!)
1 package of active dry yeast
1 cup warm water
1/2 cups whole wheat flour
2 t sugar
1/2 t salt
2 T olive oil
1 1/2 cups unbleached white flour
Dissolve yeast in water water. Allow to rest 5 mins. Stir in whole wheat flour, sugar, salt, olive oil and 1 cup white flour. Knead in remaining unbleached white flour by hand; about 5 mins. (The dough will be smooth and elastic.)
Coat a medium sized bowl with olive oil. Place dough in bowl and turn to coat. Cover and allow to rise in a warm, draft free place for 15 minutes. Spray a 14 inch pizza pan with cooking spray or oil. Stretch pizza dough to fit pan, top as desired. Cook in preheated oven to 425. Bake until cheese is melted and crust in browned (usually about 17 minutes.) Enjoy!
Mom's Tomato Soup
My mother-in-law gave me this recipe and we love it. Serve with a grilled cheese on whole grain bread.
1 28oz can crushed tomatoes
2 T butter
1/3 c cream
Combine and heat. Add 10 fresh basil leaves, cut up. Serve! <3
Crockpot Chicken
Toss one whole chicken in the crockpot in the morning. Top with either BBQ sauce or 4 cloves of garlic and 1/2 stick of butter, salt and pepper and cook all day. Ready by dinner time!
